I made tomato soup yesterday so we could have it for today. This was my second time making it, I don’t want to brag, but it tasted so good! I was concerned at first since we didn’t have any vegetable broth, but with a teaspoon of mushroom seasoning, it turned out great.

For breakfast, we had tomato soup, waffles, mixed seeds and some blueberries. I normally have early lunch, so that was enough for me to stay full till lunch.

For lunch, M brought a bag of frozen edamame, two bananas, a few small pieces of pita bread with artichoke dip, and our yummy homemade tomato soup. It might not look much, but he said it was good enough to keep him full for the rest of the afternoon.

I also had some pita bread with artichoke, a handful of dehydrated apple slices and a bag of edamame microwaved for 2.5 minutes.

For dinner, I was going to do stir-fried mushrooms, stir-fried asparagus and sweet & sour air-fried tofu cubes; however, I ran out of time, so I only did stir-fried asparagus. Since tofu was being air-fried and ready to eat, we also included it in our dinner by having it with soy sauce. It was not bad. Quick and nutritious meal!

We haven’t craved for meat yet, and we’ve been feeling pretty good so far.
