We’ve pretty much been having the same breakfast this week, yet we’ve still found it enjoyable. Although, we probably switch to oatmeals for a change tomorrow.
I’ve also been making simple dinners for several days straight. I don’t know if that’s the reason keeping us on track without wanting meat, but I don’t think I can continue to do that every single day for long. I feel fortunate that so far my work hasn’t got in the way of my being able to make dinner, and making dinner hasn’t got in the way of work. I need to start doing ingredients prep on weekends to make cooking after work faster, though.
For dinner today, I made this quick stir-fried portobello mushrooms. It was quick to make because I had prepared the mushrooms the day before, which really help speed things up. I can eat it every day. It’s simple and easy to make yet so delicious!
