One week has concluded, and we’re still going strong! At least, I’m still feeling pretty good. There are a few recipes — one of them is chickpea curry — that I’m planning to try yet haven’t gotten all the ingredients. The amount of spices I need to buy to make new recipes has been discouraging; every time I wanted to buy the spices, I felt tight in my stomach seeing how expensive a small jar of each spice cost. Ugh!
We had left over tofu and asparagus for lunch today, and it was still enjoyable.


I made another tofu dish for dinner, which turned out just fine. I was going to make the crispy honey garlic tofu bites, which looked delicious, but I didn’t have enough time to crisp up the tofu, so I just whipped up something quick. I also made a simple vegetable soup with only two ingredients, which tasted pretty good and comforting.
